Ingredients: 2 ripe bananas, 1 egg, 100ml milk, 2 Tbsp Coconut Almond Butter, 1 tsp vanilla extract, 160g plain flour, Pinch of ground cinnamon, 1 tsp baking powder, Pinch of bicarbonate of soda, Pinch of salt
Method: In a food processor, blend the bananas with the egg, milk, almond butter and vanilla, until smooth. Sift together the dry ingredients in a large bowl then gradually add the wet mixture, whisking together until you have a thick, smooth batter. Heat a tablespoon of oil in a medium pan.
Once the pan is nice and hot, drop large tablespoonfuls of the batter into a round shape and cook for 2 minutes on each side, until lightly brown and fluffy. Serve with almond butter, berries, yoghurt and honey.
