Fire Hot Sambal Paste

Traditionally known as Sambal Bajak (or Badjak) in my family. It has a smoky sweetness with a fiery taste and pairs perfectly well with roasted veggies or meat. Whenever mum made this, she would wear double-layered gloves to protect her hands from burning for days.

Easy Spicy Egg Sambal

Instructions

Serves 2

Prep time: 10 mins

Cook time: 10 mins

Total time: 20 mins

Pan-fry the boiled eggs for 2 mins on medium heat to get a slightly crispy outer layer.

Add the red onions and stir them in the pan with the eggs for 1 min.

Add Mak Tok's Fire Hot Sambal Paste and water before crumbling some feta cheese into the pan. Mix well and add coriander.

Serve with some warm rice or bread.

Tips: The crispy layer on the egg will help it absorb more sauce, giving it maximum flavour.
